Upgrade memory question

Is it ok to add 2 sticks of 8gb of the same type memory to the already 4gb in my 2011, I5, 3.1 Imac ? That equals 20gb, is this a good thing ?

Yes, you can add unmatched RAM with no problems.

What does it mean with no problems?
Will it just work? Or will it perform as good as the matched set?

Yes, it will "just work." You get a slight performance benefit from using matched RAM, but not enough to outweigh the increase in RAM.
