Can I upgrade the new mini alone ?
I mean change the hard drive to SSD instead of HDD ? maybe use both ?
They showed how easy is to open it but not sure how easy is to get to the drive .

Shows you how to get in and upgrade the drive. There is an ifixit tutorial on how to go dual drive, if you Google for it.
Not as simple as a RAM upgrade, not massively difficult but it depends on how confident you feel!

Adding a harddrive/SSD can be a bit tricky if you haven't pulled things apart before.
Take a look at this video from OWC:
It's the same for the 2012 model.
