Open Directory - assign default program to document type
I would like to force .mp4 files for a particular group of users to open in Quicktime rather than iTunes. Is there a way to make this happen in Open Directory? I have yet to delve into OD profiles, but if that is the answer, if someone can point me in the right direction I'd be grateful. Within the Server app or Workgroup Manager I don't see any place to affect this change. We are running Lion Server (10.7.5).

Application defaults are stored in the com.apple.LaunchServices.plist file in Preferences. In WGM and Profile Manager you can assign custom plists to specific users, groups or computers
So if you add that, you can change default apps. I suggest taking a copy of an already existing file, then using a program like PListEdit Pro to make any changes
