Need equipment advice for recording two people simultaneously

I need to buy two headset/mics to record two participants separately during a research study and am not completely sure what I need.

I read through the guide and seems that I need a USB computer interface between the computer and mics. But how do I know an interface will allow me to record each mic in a separate time-stamped track?
