Ok, so I am up and running with a brand new Snow Leopard Install.

Installed Firefox and SuperDuper, but what else is a "MUST HAVE" Imac App that everyone recommends I should install and which will help keep my iMac running well and being used to it's fullest potential.

You don't need any 3rd party apps to keep your Mac running well, as OS X takes care of itself. You can focus on apps that help you do whatever you use a computer for.

Had a quick look at your list, many of these are paid applications.

The only one I use that's really worthwhile looking at is Evernote.
