So, gray icons in OS X, but colors in iTunes 11?
Okkkkaaay, so we have Apple forcing "grayness" everywhere (OS X, Safari and whatnot), but iTunes has colorful icons and everything.
Sooo, what exactly is Apple's logic behind this?

Simple: the last iTunes has gray icons, the color appears to bring a freshness to the interface.
Honestly, how should we know what goes on in the minds of the Apple devs? |

The side bar in iTunes is hidden by default. Less potential for distraction.
