I recently bought the new gopro Hero 3 black and discovered my old MBP can't render 1080p without choppy frames. I'm interested in the 2011 iMac and was wandering if anyone could post their experience with this their iMac and editing HD video.

Did you mean the 2012 model?

Because the 2011 model is only available via refurbished.

Well, a 2010 model iMac should be able to work well with 1080p video, so the 2012 one should work better.

If you did mean 2011, then that's still good enough.

You would be better of buying an i7 iMac as the i7 is better for the rendering of H264 format also time line scrubbing will be better as well.

I have been editing on a 2011 iMac with an i5 using Final Cut Pro X and iMovie.

No issues at all.
