I don't need the server part, but the refubs from apple on the 2011 i7 quad core is about $749, so similar to the $599 of the new 2012 i5 dual core model.

was thinking the higher price might help the mac mini stay future proof a tad bit longer, was wondering your thoughts on this.

2012 has better graphics, slower processor, and USB3
2011 faster processor, USB 2,

what other differences should I look for?

If the refurb is 749, then get the mid 2012 for 799.
More speed and HD4000 instead of HD3000.
Or when 599 is more your target money, get a 2011 mid model. Same speed as the new entry but better graphics and runs more apps (all old PPC ones for example).

The 2011 model also has 7200rpm vs. 5400rpm hard drives, although it probably won't make a noticeable difference... especially if you install an SSD. :)

However, even if you install an SSD in the 2011 server, you'll still have the additional 500GB drive installed.

If it's primarily to play games, I'd go with the 2012 version because the graphics are faster. USB3 is also a nice touch. Keep in mind that the mid-level 2011 would be even better for most games due to the Radeon graphics chip.

If it's going to be used for processor-intensive work and running VM's then the 2011 server is the easy choice.

Either way, get a 16GB memory upgrade from OWC or Crucial since it's so cheap.

I just had this same issue. I could not decide between the 2012 i5 or the 2011 i7 server.

I went with the 2011 i7 quad core server with two 256 SSD's and 16 ram. I got it used on Ebay for $780 and I could not be happier and I do not need to install anything and it is fast.
