iPhone 5 local backup folder

I have to travel OS to a country where there is no data agreement with my carrier and I requested for my iphone to be unlocked to get a local sim. I won't have access to itunes and someone said I could do a local backup folder or create one in itunes and drag it to my iphone to be able to accesss it with the new sim card. Does anybody know if it's possible at all or how to do that ?
Any help greatly appreciated!
