How do I restore to an old backup?

My phone dropped 18% overnight. been a mess since 6.0.2. I have an update from 12/7/12 but its greyed out. how do i restore to that old backup?

well now i plugged in phone and it automatically updated to today. not sure why and what my options are now. would i want to restore to todays backup if my phone is messed up.
