Static IP on computer-to-computer network

Does anyone know how I create a 'computer-to-computer' network with a static IP? I mean the network where you click on the Airport icon on the toolbar and select 'Create Network'. I want to create one of these networks where the IP doesn't change so I don't have to keep updating it from my iPhone which I am connecting to..
