cleanup in itunes

I am trying to reorganise my music on my ipad 1 (ios5.1.1) using itunes 11 on a macbook pro.
I have deleted all the music from my ipad but in itunes, I still have stuff under the Music tab for my ipad (see attached)
How can I get rid of all the artists, albums etc listed so I can start with a clean slate?

What is the best way to add albums from Shared library on my macbook? I have tried dragging an album from the library onto the connected ipad but sometimes this works and sometimes it just doesn't until I exit itunes and restart it.
