Mid 2010 13" MacBook Pro
I have a Mid 2010 13" MacBook Pro
Intel Core 2 Duo (P8800) 2c 2.66GHz 8GB DDR3 RAM Nvidia GeForce 320M 750GB 7200RPM HDD AppleCare until December 20, 2013 Assuming it's in perfect condition, how much would this be worth?

you can use this site
http://www.mac2sell.net/ but each country is different, here in singapore you could probably sell it for about 700-800 dollar.

I would say....
between $750-900. The remaining AppleCare, good care of the machine and no cosmetic/functional issues can help in the price.
If selling through an online site, factor in shipping costs/fees
