On non-retina iPads they will now display the full retina iPhone resolution of 960x640 which is close to the 1024x768 resolution of the device. It won't use quite the entire screen, but it should be much sharper than what they used to do which was take the 320x480 asset and double it to 640x960. If your epub app is retina iPhone enabled, it should be sharper - however if you can find a native iPad app, that will still be the better option.
