Hi, I have a Mac Pro 3,1 and I've been thinking about upgrading my GPU because it only has a 2600XT that really doesn't give me the processing power I would prefer. Could I, essentially, buy any PCI card that I wanted and use that to boot a Windows partition, then pop in the 2600XT when I want to boot OSX?

No reason to have to continue to use the 2600XT for OSX. Take a look at the sticky thread at the very top of this Mac Pro forum titled: "Frequently Asked Questions About NVIDIA PC (non-EFI) Graphics Cards".

There are a lot of what used to be "PC-only" cards that work very well in Mac Pros running the latest version of OSX.
