Backup software for 2 external drives

Hi all,

I do my video work using an external RAID 0 enclosure.

Does anyone know of an app that will automatically make a copy of the data from my external RAID to another external drive?

Ideally the app would perform the backup when I plug the external drive in, and only copy across the data that isn't already there.

The app Carbon Copy Cloner will do exactly what you want. See here. Set up a "scheduled task" to run when the external is detected.
