I'm wondering, is there any way that this can be done:

Currently, when I connect to another mac on my network, I can do the regular screen sharing, and have that mac's screen pop up in a window.

But my mac has multiple monitors. Is there any type of screen sharing wherein I can dedicate one of my monitors to the mac I am connecting to, let it take full control of that monitor, and not just a window?

That would be awesome.

Can't you just drag the screen sharing window (when it is open) into the next monitor and 'enlarge' it to full screen. There are also settings in the screen share that might help you taylor that.
