When you copy a video onto iTunes, iTunes "chooses" the still that will show on the Pictures version (as opposed to the text version) of which videos you have on your iTunes. Is there a way that you can change the still to another still of your choise in the video?

I am not sure if the artwork is actually the still (it appears it is) but you can set the artwork to be whatever you want. See if that helps.
While playing the video, navigate to the part which you would like to choose as the still frame. Pause the video, and right(ctrl) click on the video, then select "set poster frame" from the menu options.
