I assume most of it doesn't really need backup because they would be recreated on a reinstall. I'm most interesting in backup in user data. So far I have:

Application Support
Calendars
Keychains
Mail
PreferencePanes
Preferences
Safari
Thunderbird
Widgets

I would back it all up to be honest. If you're that constrained with space, then get a larger drive, storage is cheap

My primary backup has plenty of space. My secondary backup (Dropbox) doesn't.

I would backup everything except Caches, which would be recreated. Just skimming through there, every folder has some sort of setting you would want to keep, or is just empty anyway so won't take much space.
