Is it possible to do so? I'm on ios 6.1 and i've got pretty important apps i dont want to lose, and i have documents in those apps that i dont want to lose either. suggestions are well appreciated.

No, it is not possible, that's not how it works.

If you upgrade or restore, it loads stock iOS and you lose your jailbreak. Once you do that, you must rejailbreak. However, there is no jailbreak as of yet for iOS 7.

Your only two options are to stay jailbroken on iOS 6.1, or upgrade to iOS 7.0.4 and lose your jailbreak.
