Couple questions:

The signal coming out of the airport express is analog or digital?

I was trying to stream iTunes via WiFi, to the a.e. then connect the airport express to my DAC then with RCA's to the pre-amp and 2 channel stereo.

If the signal coming out of the a.e. is analog then I guess there is no need running through the DAC again, correct?

If the signal is digital, what type of cable do I need to get to the DAC, a.e is analog/optical audio jack and input on the DAC is Toslink???

Im getting mixed answers and I'm confused at this point.

Thanks,
newb RonW.

From Apple tech page for Airport Express:
3.5-mm audio minijack for analog or optical digital sound

So, yes, either analog, or digital audio is available from the output from your Airport Express, depending on what you use to connect.
Standard audio minjack for analog, or a minijack with extended jack adapter for the digital output in the same connection.
Apple sells this cable, which includes the adapter that you would need.

Or, you can get a cable with the proper end - no adapter needed.
