will messages sent between myself and other iPhones be regular text messages?? Will we be able to see when the other reads or replies to a text?? Also there's an MMS Messaging on/off toggle. What does that affect?

If I turn off iMessage on my iPhone...

Unless you have another device with iMessages (Mac, iPad, iPod Touch, etc).
Then the iMessage will still goto the other devices even if you disabled it on your phone, and you would have no idea someone iMessaged you until you see it on the other device.
