All email is unencrypted, unless you're using a specialized email service that encrypts it.

The encryption between the client (your browser or Mail app) and the Apple server is encrypted and secure during transport.

Here is my browser session with iCloud right now showing it is encrypted during transport.

On my Mac with Mail.app I uses GPGTools to encrypt emails if I need to.
