When I play games on my Windows partition and set the resolution to the Retina resolution, the HUD becomes extremely small and I can't play the game like that. I have to be able to click on everything and read all the text.

How do I play games on Bootcamp without the HUD/text being super small?

Lower your resolution. Unless your game has some kind of DPI scaling in it (here's a hint: I'm not aware of any game that does), there isn't much else to do.
Diablo 3 does proper UI scaling. Other Blizzard games might also do this - don't know about those.
