No surprise, but iPhone 6 Plus has less memory to work with than iPhone 5S.

I used iDemonstrate to check memory stats of iPhone 5S and iPhone 6 Plus after restarting at the same time. The 6 Plus was restored from the 5S and some apps weren't available to download again, so that may have an affect on the stats.

What are your memory stats? Let's compare.

I don't think that app is correctly reporting RAM for the iPhone 5s. 1024MB = 1gb. It's saying the 5S has slightly over 1GB...

Did you power cycle before launching iDemonstrate? 540 MB doesn't seem right.

I noticed that too. I'm not sure how the app calculates Total memory or if it's iOS reporting it after compressing memory.
