Set up as new will i lose everything

If I set up iPhone 6 Plus as new device from iTunes, will I lose all pictures, music, etc already on iTunes?
If so I can backup to a USB stick!
A lot of apps I want to avoid sync to a new phone...

It won't delete anything from your iTunes library. You phone syncs to match iTunes, not the other way around.
