iPod touch How to change stock apps' icons.

I can change other images in the stock apps (such as the default image that appears when you open an app), but for some reason when I change the app icon, the old one stays there. When I exit an app, I see my own custom icon appear very briefly before it returns to the original app icon. I can't figure out how to stop that...

also i'm running iOS 8.1 on the Pangu Jailbreak.
