I think iTunes is probably your only choice AFAIK

Just plug you phone into itunes and do the OS upgrade. That way it will not need the room like an OTA update. iTune will download the update to your computer and then apply it to your device.

back up to itunes
once the backup is complete

click on file, device, iPad, transfer purchases. this will make sure all app updates and any content you purchased on the iPad gets transferred to itunes as well

by default, app updates and purchased stuff do not get backed up to itunes
anything synced from your itunes library to your iPad is not in the backups
