I have a late 2009 iMac, 27", Serial #W8942GFH5PE, EMC 2309, with a
1TB SATA Disk 7200.

Its been acting funky, and I think the HDD needs to be replaced.
I need suggestions regarding exactly what HDD I should get to replace the
existing one. I would like to get a 2TB drive, 7200.
Any help will be greatly appreciated.

Any 3.5" SATA drive will work, however you need to get one of these too:

You will need it because since 2009 Apple has used HD's with thermal sensors integrated into the HD, almost no HD's have that feature making this cable a necessity unless you want to mess around with a software solution that is more risky.
