You mean like the "Enable disk use" option in the iPod preferences?

No. More like using it like a server.

I want to be able to organize it like I want w/o using iTunes.

While using a computer or while using the iPod itself?

While using the computer. I want to be able to access the music and files directly through the finder, w/o iTunes.
