I want to change the apple icon when the mac boots up. The White screen with the grey apple. I know there is a way to do this, but i can't seem to find it.

I'm sure there are people here who can help you out with that...but I've got to ask, why? Are you seeing your boot screen that often? Shoot, I can usually count how many times I boot per month on my fingers.
Maybe you should look into changing your login screen. I've seen some neat mods for that.
