Ripping DVDs to Apple TV?

With the Apple TV around the corner, I was wondering if there was a guide for ripping my movies & TV on DVDs guide, other than "Set Handbrake to 100% and rip."

In particular, AVI vs MPEG, H264 vs whatever the other thing is in handbrake, etc.
