You can use GraphicConverter and make a new file based on what is in the clipboard. Or just make a new image in GIMP and paste it. Command-V pastes.

If you just want an image file (i.e. you're used to using ctrl-printscreen in conjunction with Paint in Windows), drop the ctrl and just do cmd-shift-3 or 4. Then you get an image file on the desktop. Then you can just drag that to iPhoto, etc, if you want to store it, but you've already got an image file.
