Any way to tell my Mac that I don't want iPhoto and iTunes to switch modes (which is annoying when trying to just start playing music from my library, but iPhone is selected). It's not that big of a deal to just hide iPhoto and go back to "Library" in iTunes, but if I dock my iPhone a few times a day, it get tiresome. Anyone have any suggestions?

Open Image Capture.app and set the action to "no application" when a camera is connected.
