If/When the ipod touch comes out wednesday is it going to be hard to find? will there be shortages if you look for it a week later?

who knows...if it even comes out, Apple supply of it, sales(price has lots to do with this)

Having been 2 years now it can be said that the iPod touch is not hard to find. There, it only took 2 years of wait to get the answer to your question. 🙂
