changing icons and icon software

I have never done it before but I'm curious if you change icons on your mac, how you can get back the default icons in case you needed. Also is there a free program that will make changing icons easier? What programs do you use and where do you get your icons from?

candybar make is really easy to change icons but it is not free

there is a way to do it via opening the "get info" windows (see the picture below)

Why can you not copy these icons and then paste them into photoshop? Where would I find the image files for the icons? I want the icons in jpg of tiff format to use for a project.
