If you go to expose under the new site for panther and open the quicktime demonstration you will see two windows for iTunes one with a playlist and one with the music store projected in it...HOW DO U DO THAT!?...cant figure it out...

is it possible to open a whole new iTunes window for individual play lists?

Yes, it is. Just double click on the icon next to the playlist.

It should be noted that this is only for playlists on your own computer. i.e. you can't open a separate window for your library or for any part of a shared library, nor the music store.
