Does anyone have a handle on how frequently Apple will add new rental movies? Have they added any since they were announced? Just wondering.

Just as and when it becomes available I think. I'm guessing they'll want to roll out the Take2 update, get some feedback then start adding movies.
If i'm not mistaken, new releases will take a month to hit the ATV........id also be interested in knowing what the process is for what and when they will add? I'm really hoping that sometime in the future i'll be able to find pretty much everything i'm looking for
I was scrolling through some of the available titles and spotted the classic, "Mars Needs Women" and thought, so that's where the dog movies go to die. 
I've seen newly added movies most everyday this week -- they are up to over 80 HD movies when I counted this morning (yeah, I'm a tad ocd).
