Where does iTunes store iPhone sync/backup information?

As title says, id like to know where itunes stores the backups it does of my iphone, and see if it is possible to edit this information. I want to delete any old apps etc that might still be lingering in the backups.
 
I know its almost a year late but...

~/Library/iTunes/iPod Software Updates

~/Library/iTunes/

holds interesting stuff, plug-ins software updates and mobile backups
