im not sure why you would do that
but download the 1.1.1 firmware, then go into itunes, hold SHIFT and click 'restore' it then asks you for a file, pick the 1.1.1 firmware, and then let it restore the ipod |

ZiPhone doesn't seem to work well with 1.1.4. Is there a proven way to downgrade then use ZiPhone again?

best way to go is iTunes 7.5 and just stick ipod in recovery mode via home and sleep button then download the 1.1.1 restore file.
in iTunes hold the shift key (if using windows), options key (if using mac) then press restore and point iTunes to the downloaded file. if using safari make sure the option to open the file after download is unchecked as it may extract the IPSW file to a folder |

iTunes 7.6 works fine. The only problem is with the 1.1.2 Jailbreak, but even then you just have to run iNdependence.
