I am creating a sparse disk image with disk utility. It offers various "partitions" - I am stuck between choosing "no partition map" and "Single Partition - GUID Partition MAP". Any idea what the former is used for?

A disk image is basically a virtual disk. Therefore, it has all the same capabilities a real disk has - including the ability to be partitioned. Therefore, no partition map should be used only if:
  1. You do not intend to partition the sparse image
  2. The sparse image is not intended to be used with Mac OS X Server for NetBoot purposes
If either of the two cases (or both) are true, use GUID.
