iPod iPod + iTunes - supposed to "just work", but isn't

I'm having an odd issue with my iPod classic 160GB and getting iTunes to recognize it. If I launch iTunes while my iPod is connected, or have my iPod connected when I boot and log in, it works. If I then quit iTunes, wait for the iPod to return to the main menu, and then relaunch iTunes, iTunes won't see my iPod now.

Anyone know why this is happening? I know the USB port the iPod is connected to is good - other devices work perfectly in this port.

It just sounds like it is unmounted. Unplug the ipod from the cord and plug it back in. Same thing with most external drives.
