easy question, how do I "un-jailbreak" my iphone?

I have a jailbroken 1.1.4 iPhone right now, how to I "un-jailbreak" it? Do I just hit restore on iTunes? Will that brick it?

You got it, just restore in iTunes and you'll be good as new

Will this also lock it back to the carrier? I don't want that!

Yes. Restoring will return the phone to factory 1.1.4 settings (i.e. locked and no third party apps) If you want to keep using the phone on another network you can't restore or update to 2.0 until a jailbreak+unlock is released.
