Go to the Targets item in Xcode (in the left-hand pane, normally) and expand it to show your app. Then select the app and do cmd + I to bring up the info pane. Go to the Builds tab and scroll down to the Packaging section. The Product Name item is the name that your application will use. If you want to change the version, you can do so in the Properties tab.

Thanks. The only probably with that solution for me is that it will still overwrite any already installed version of the program under the old name, which isn't what I want in this case. (I'm trying to do a demo version beta branch that doesn't need the webservice I'm interacting with, so I want people (including myself) to have the option of installing the full version, the test version, or both).
