I was a HUGE fan of Apple Works, it is so sad not to see it on their new computers.

But now I am quite a fan of iMovie '08. Took a lot of getting used to after using HD, but the slimmed down, easy iMovie helps make quick YouTube videos.
 
My choice would depend largely on the context, but generally speaking, Quicksilver is my favorite app.
 
Bean's a great word processor.

I generally find love in all the snippet keepers available. Caboodle's my favorite.

Journler is the best designed piece of software out there.
