Try a reset (hold down power button and home button until phone shuts off). If this doesn't work its likely you will need to restore and try your jailbreak again. How long do you let it hang at the Apple logo? It can take some time to boot up the first time after a jailbreak. Another option is to just try the jailbreak process again without doing a restore.

When I updated to 2.1 from 2.1 this happened to me too.

The phone was in a continuous reboot loop.

I forced the phone into 'Restore' mode, and started over again from scratch. That worked for me.

I was able to trace the problem to the app, "Categories."

Apparently, you're supposed to undo all of the modifications that Categories makes to the phone before updating, and I didn't.
