This is really stupid. iTunes will let me sort my albums by their release dates in Grid mode, but not Cover Flow. Is there a way to fix this with a hack or plugin?

Yup. Like this:

this will work with cover flow aswell, here is an example of 7 albums sorted this way:

(of course, there's no way to show you that these albums are actually displayet cronologically,.. :/
