I've got a new PB coming (hopefully this week) and I'm planning on upgrade the memory with a purchase from Crucial.com. My question is, do I go with a 256meg sodimm or a 512meg one?

How much improvement in performance is 768 over 512? I don't plan on doing anything super rigorous, but I don't want the machine to be sluggish either.

both of them will be good

with the 512 you will not be forced to upgrade anytime in the future
 
Check out www.barefeats.com . He does a little blurb about how much mem your mac is using. Basically, the number is close to a gig. So the more, the better... but if you can't afford the big stick, you should still be okay.
