I've got quicktime pro installed and I have perian.
For some reason, everytime I go to View and Subtitles, it says something like turned off ( I am Dutch, so I dont know what it says in english ). De color of the text is grey like this , so it is unclickable.

Does anyone know a solution?

It may be that there are no subtitles associated with that video. Not all videos have them.

Well, it doesnt work with any movie I use, neither one of them are able to use subs. Which is strange because I've downloaded the subs and put them in the same file.

Well, it didnt really do what I was looking for.
You see, I have a lot of sub files, all with the right filetype for every movie, but quicktime refuses to let me use them. This is for avi/mpeg/etc...
I tried it in vlc but he doesnt let me use subs either.

Then maybe there is a converter out there that will convert your filetypes to one useable by either QT or VLC.
