Recording Video in iPod-ready Format

Does anyone know if a timer-programmable device exists that will allow me to record video at 640x480 that is already in iPod/iPhone format? I have tons of VHS that I would like to digitize and I know that El Gato and Blackmagic Design make units that will allow me to do that without the lengthy conversion process, but they do not have timers. I would also like to record from my set-top-box occaisionaly while away from home.
